Robineau Patisserie is looking for an experienced person to manage the running of their busy patisserie bakery kitchen which creates the individual patisserie sold in the shop, large dinner party style desserts, bread, scones, croissants, frangipanes, celebration cakes and chocolates.

This is a 'hands on’ role working with and organising a team of three to ensure the smooth running of the day and weeks ahead. Our pastry sous chef will play a vital role in the seasonal menu changes for both the café and the shop. In addition to this we also create a range of products for Valentines, Mother’s Day, Easter and a Christmas brochure, from which we generate hundreds of orders every year.

This is a permanent position, with a minimum of 38 hours per week over four days; Wednesday to Saturday. Hours of work will generally be between the hours of 6.30am and 4pm, depending on the season. Extra hours and days will be required at busy times of the year e.g., December, Mothering week, Easter etc. These extra hours/days will be paid in addition to your normal salary.

Duties will include:

  • Preparation of patisserie e.g., éclairs, cheesecake, fruit tarts etc.
  • Production of dinner party desserts
  • Production of classic cakes e.g., brownies, Victoria gateaux, etc
  • Production of bakery products
  • Afternoon Tea pastry production
  • Macaroons & Biscuit production
  • Buffet desserts including patisserie platters, large frangipane tarts, cheesecakes and gateaux of various flavours
  • Celebration cakes: Chocolate and Iced
  • Supervision of the Savoury kitchen during the Head Chefs holidays (training given)
  • Ensure a clean and hygienic kitchen is maintained at all times
  • Checking deliveries, correct storage of stock and correct portion control.
