An excellent opportunity for a Baker / Pastry Cook to join a well-established company.

Job Type: Full-Time, Permanent.

Salary: Starting salary for a junior baker is £24,960 + overtime. Salary increments are available for experienced bakers/pastry cooks.

Location: Comrie, Southern Highland, PH6. Due to rural location candidates must be with a commutable distance or be willing to relocate.

Working Hours:Full time is 4 x 10-hour shifts per week with a 20 minute paid break, Monday to Friday daytime only, with occasional weekend shift (every 6-8 weeks). Staff lunch is provided.

About The Role:

Bakery shifts are loosely divided in pastry and bread (mix, bake) shifts with a generous overlap in responsibilities. As part of the bakery team, subject to experience you will be required to perform or assist with the following:

Pastry:

  • Production and baking of viennoiserie (laminated pastries)
  • Production and baking of other sweet bakery products (cakes, tarts, etc.)
  • Frying and filling of bomboloni
  • Preparation of stock products required for pastry products (marzipan, cinnamon spread, scroll sugar, crème patissiere, custards, streusel, etc.)
  • Development and evolution of products to assist with the creation of new &/or special occasion products, and reflect seasonal changes in produce availability
  • Assessment of products such that the presentation and quality is in keeping with the expectations of the bakery
  • Liaise with head baker &/or packing and delivery staff regarding changes to or problems with daily bakes

Bread:

  • Firing, management and cleaning of a wood-fired hearth oven
  • Monitor and maintain bakery starter cultures, levains and continuations
  • Mixing and shaping of naturally-leavened doughs
  • Baking and packing various styles of sourdough breads (baguettes, hearth loaves, tins, etc.), including the use and maintenance of a manual loader, wood-fired hearth oven, and peels/brushes
  • Scheduling and management of the days mix/bake to allow reasonable timing between shaping sessions and oven loads
  • Daily cleaning and maintenance of work areas and equipment, including mixers, shaping table, tins and scales
  • Development and evolution of products to assist with the creation of new &/or special occasion products, and changes to reflect availability of seasonal produce
  • Assessment of products such that the presentation and quality is in keeping with the expectations of the bakery
  • Liaise with head baker &/or packing and delivery staff regarding changes to or problems with daily bakes (including the labelling of crates to identify specific products and leaving a message for drivers regarding changes, problems, and overall quality of the day’s bake)

General Responsibilities:

  • Preparation of staff meals
  • Maintain a clean and pleasant work environment
  • Work safely with and respectfully of other staff. Report any concerns, faults or safety issues to senior staff so that they can be promptly dealt with
  • Monitor stock and report whenever anything is running low to ensure ingredients needed are always available
  • On occasion you may also be asked to perform additional responsibilities such as assisting with packing of bread/pastries, slicing, deep clean and maintenance activities, manning market stalls, and participation in special events (pizza nights, for example)

Experience / Qualifications needed:

  • Two years working in a professional capacity is preferred, though we will consider candidates who are enthusiastic and self-taught.
