A specialist fine food wholesaler seeks a professional Fish Cutter / Fish Filleter to support helping prep fresh fish to a high-quality level to meet customer’s quality, quantity and specification requirements
TYPE: Permanent, full-time
WORKING HOURS: TBC
SALARY: £28,000 - £40,000, depending on experience and working hours
START: ASAP
LOCATION: Billingsgate Market (Office Based)
Fish Cutter / Fish Filleter Main Responsibilities
Block
- Ensure the correct product, quantity is prepped and packed as per the customer order and specifications
- Check the quality and best before dates are acceptable. Report any issues to your manager
- Ensure that no poor quality products are despatched
- Ensure that all paperwork is correctly completed
- Ensure the boxes are clearly and correctly labelled
- Ensure that the block area is left clean, debris free and organised at the end of the shift
- Keep knifes and equipment clean and suitable for food production
- Ensure that there is adequate handover to the next shift
- Report any H&S and food safety concerns to a manager immediately
- Work with and support other departments and managers as part of the team
- Attend team and company meetings as required
Health and Safety
- All operational areas comply with health and safety regulations
- The correct PPE must be worn at all times which the company will provide
- Health and safety records are kept up to date
Food Safety
- All necessary paperwork is completed from a food safety perspective, i.e., temperature checks, packaging reviewed, traceability procedure followed, batch dates included where applicable.
- The correct Food safety PPE must be work worn, which the company will provide.
- Ensure that all products are rotated in a FIFO stock rotation system.
- Roles requires minimum obtaining Food safety level 2
- Ensure that any use by and out of date products are removed from sale, placed in quarantine location immediately
Fish Cutter / Fish Filleter Ideal Candidate
- Experienced of working in a chilled & frozen environment
- Experience of working as a block person / fishmonger
- Good understanding of food production, warehouse & transport environments
- Ability to work with Fresh fish / food products
- Good numerical skills and attention to detail
- Good people skills to work with the team
- Flexibility to adapt to changing requirements
- High levels of personal hygiene
